Sticky Rice with Mango
This recipe combines the beloved flavors of coconut with the unique sweetness of date sugar, creating a delightful twist on a classic dish. With just a handful of ingredients, this recipe offers a creamy and fragrant experience that will captivate your taste buds.
- 1/3 cup Date Sugar
- 1 cup sushi rice
- 14oz can coconut milk
- 1 cup of water
- 3 anise pods
- pinch of salt
- Rinse the sushi rice.
- Add all of the ingredients to a stock pot, place over med/low heat and continue to stir.
- Cook for approx 10 minutes or until partially cooked, lower heat and cover with a lid.
- Cook for an additional 10 minutes. Check the rice to assure it's cooked and all the liquid are absorbed.
- Remove the anise pods and serve with fresh mango. Enjoy!
