No Bake Chocolate Coconut Cookies

We LOVE a no bake recipe, particularly when its refined sugar free! 

These No Bake Chocolate Coconut Cookies are mouthfuls of heaven and so easy to make. 

Ingredients:⁠
1/2 cup raw cashews ⁠
1/3 cup unsweetened shredded coconut ⁠
2 tbsp D'vash date syrup⁠
1/2 tsp vanilla extract ⁠
1/8 tsp sea salt⁠
Dark chocolate for melting ⁠

To make:⁠
1. Soak the cashews in hot water for at least 20 minutes to soften
2.In the meantime, toast shredded coconut in the air fryer for 3-4 minutes at 400F until golden brown
3.Once cashews are soft, add cashews and date syrup to a food processor. Blend until cashews are not chunky
4. Add in vanilla, toasted coconut, and salt. Blitz a few times to mix the coconut
5.Scoop out balls onto a sheet lined with wax paper
6. Melt some chocolate down, and dip each ball into the chocolate
7.Place on wax paper, top with more coconut and drizzle with extra chocolate ⁠
