Cookie Dough Date Bars⁠

These cookie dough bars are packed with caramel flavor from the dates. They are chewy, sweet and will energize you through the afternoon! ⁠
1 cup of D'vash dates, pitted⁠
2 3/4 cups of oat flour (or process your own using quick oats)⁠
1/4 cup of smooth tahini ⁠
4 tablespoons of D'vash date syrup⁠
1 tablespoon of vanilla extract⁠
1/2 teaspoon of sea salt, plus flake salt to top⁠
3/4 cup of vegan chocolate chips (melted and solid)⁠
2 teaspoons of coconut oil, melted ⁠

Instructions:⁠

1. Line a loaf pan with parchment paper for easy removal.⁠
2. Add all ingredients to a food processor (except the chocolate chips and coconut oil) and blend until a sticky dough mixture forms.⁠
3. Fold in 1/4 cup of the chocolate chips.⁠
4. Press dough mixture into pan.⁠
5. Melt the remaining 1/2 cup of chocolate and coconut oil in a small bowl in the microwave.⁠
6. Pour the melted chocolate mixture overtop of the cookie dough mixture.⁠
7. Top with flake salt and place in the freezer to set.⁠
8. After 30 minutes, remove from the freezer and use a hot knife to cut into bars. Enjoy! ⁠
