Cookie Dough Date Bars
These cookie dough bars are packed with caramel flavor from the dates. They are chewy, sweet and will energize you through the afternoon!
1 cup of D'vash dates, pitted
2 3/4 cups of oat flour (or process your own using quick oats)
1/4 cup of smooth tahini
4 tablespoons of D'vash date syrup
1 tablespoon of vanilla extract
1/2 teaspoon of sea salt, plus flake salt to top
3/4 cup of vegan chocolate chips (melted and solid)
2 teaspoons of coconut oil, melted
Instructions:
1. Line a loaf pan with parchment paper for easy removal.
2. Add all ingredients to a food processor (except the chocolate chips and coconut oil) and blend until a sticky dough mixture forms.
3. Fold in 1/4 cup of the chocolate chips.
4. Press dough mixture into pan.
5. Melt the remaining 1/2 cup of chocolate and coconut oil in a small bowl in the microwave.
6. Pour the melted chocolate mixture overtop of the cookie dough mixture.
7. Top with flake salt and place in the freezer to set.
8. After 30 minutes, remove from the freezer and use a hot knife to cut into bars. Enjoy!
