Super Soft Choc-Chip Cookies

Ingredients:
- 1 1/2 Cup (180g) All-Purpose Flour
- 2 Tsp Cornstarch or Cornflour (UK)
- 1 Tsp Baking Soda
- 1/2 Tsp Fine Salt
- 1/2 Tsp Espresso Powder
- 10 Tbsp Butter, melted
- 1 Cup (160g) Date Sugar
- 3 Tbsp (48g) Date Syrup
- 2 Tsp Vanilla Paste or Extract
- 1 Large Egg + 1 yolk, room temp
- 3/4 Cup (127g) Semi-Sweet Chocolate Chips
- 4 oz (113g) Dark Chocolate Bar, roughly chopped
- Flaky Sea Salt
How to:
- Preheat your oven to 350°F (176°C) and position a rack in the center.
- In a mixing bowl, use a hand-held or stand mixer fitted with the paddle attachment to whisk together the melted butter, date sugar, date syrup, egg, yolk, and vanilla until the mixture becomes light and fluffy. This process should take approximately 4 to 5 minutes on medium speed.
- Sift the all-purpose flour, baking soda, cornstarch, espresso powder, and salt into the bowl. Mix on the lowest setting or by hand until the dry ingredients are just combined. Avoid over-mixing.
- Fold in the semi-sweet chocolate chips and the chopped dark chocolate, ensuring they are evenly distributed throughout the dough.
- Using a large ice cream scoop (approximately 4 tablespoons), portion out the cookie dough and place each portion onto a parchment-lined baking tray. Leave about 2 inches of space between each cookie. Since the cookies don't spread much during baking, gently flatten each portion into a disc shape, about 1/2 inch (12mm) tall.
- Bake the cookies for 8 minutes, then allow them to cool on the tray for 2 minutes before transferring them to a wire rack to cool completely.
- For optimal taste, enjoy the cookies when completely cooled. They can be stored in an airtight container on the counter for up to 4 days.
