Apple Date Cupcakes with Spiced Buttercream Frosting

These gluten-free treats are a sweet symphony of apples, dates, and warm spices, topped with luscious, dairy-free spiced buttercream. Perfectly autumnal, these cupcakes are a delicious way to savor the season!
Ingredients for Cupcakes:
- 2 1/2 Gluten Free Baking Flour
- 1 1/2 tbsp baking powder
- 1 tsp cinnamon
- 1/2 lemon, juiced
- 1/2 tsp kosher salt
- 1 cup applesauce
- 1 cup Khalas dates, chopped
- 1 1/3 sugar
- 3/4 cup unsalted butter, room temp, I used DF
- 2 eggs
- 1 tbsp vanilla extract
- 3 sticks of butter, room temp, I used a dairy free
- 5 cups of powdered sugar
- 1 tsp cinnamon
- dash of allspice
- 1/8 cup of dairy free milk
- 2 tsp vanilla extract
1. Preheat the oven to 375 degrees and prepare muffin pan (16 muffins) by lightly spraying with baking spray.
2. In a mixing bowl add the sugar, eggs and butter and mix for 3 minutes
3. Add the rest of the ingredients until just incorporated, then divide the batter into the muffin pan
4. Bake for 25-30 minutes or until a toothpick comes out clean.
5. Allow to cool completely
6. Make your frosting by combing all the ingredients together and mixing with electric beater.
7. Pipe the frosting onto cooled cupcakes
